Malt Extracts Comparison
Malt extracts are your door into homebrewing. If you’re brewing an extract kit then you’ll start with one of these. There aren’t hundreds of options like traditional grains but there is enough to make a good beer with the right specialty grains.
A malter makes malt extracts by essentially making a giant batch of wort and condensing it down through various processes. Generally you can find what grains they used on the package. The Homebrewer’s Association has a great write up on how malt extracts are made.
Malt extract comes in either a powder or liquid form. The powder is almost like a cross between brown and powdered sugar. It’s very sticky and loves absorbing moisture. The liquid form is very much like a syrup. It’s impossible to get all of it out by just pouring so plan to swirl some warm water around to get every last drop of fermentables. The liquid version also comes in either hopped or unhopped variations.
There’s no real need to boil the extract for a full 60 minutes. A quick 15 to 20 minute boil will be long enough to boil off most bad flavors and kill any chance of infection. You can however boil for a full 60 minutes or more without issues.
Malt extracts do have a few drawbacks. They make a batch more expensive compared to brewing the same in all grain. The main drawback is you will lose quite a bit of flavor control. Even base malts give off flavors that you can’t quite get with an extract. Malt extracts tend to have similar caramel-like flavor so you’ll also need a good selection of speciality grains and yeasts if you want some variety in your beers.
Here’s a list of malt extracts that I’ve found available at most homebrew sites. I’ve included flavors, ingredients, PPG, Lovibond, organic info, and even gluten-free info to help you build your recipe. Most of the stats have come directly from their malters but some have been averaged from similar extracts as there appears to be nothing for them in the spec sheets.
